To cook crispy zucchini and steak in the oven, follow these steps:
Ingredients:
- 1/2 lb flank steak
- 1 sweet potato, peeled and cut into fries or wedges
- 2 zucchinis, sliced into rounds
- 1 cup freshly grated Parmesan cheese
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Olive oil (for drizzling)
- Salt and pepper (to taste)
Instructions:
1. Preheat the Oven: Preheat your oven to 425°F (220°C).
2. Prepare the Sweet Potato:
- Toss the sweet potato fries or wedges in a bowl with olive oil, salt, pepper, and some of the dried herbs (thyme, oregano, and basil).
- Spread them out on one side of a large baking sheet in a single layer.
- Bake in the preheated oven for about 15 minutes.
3. Prepare the Zucchini:
- While the sweet potatoes are baking, prepare the zucchini. In a bowl, toss the zucchini rounds with olive oil, salt, pepper, and the remaining dried herbs.
- After the sweet potatoes have baked for 15 minutes, remove the baking sheet from the oven and add the zucchini on the other side. Sprinkle the grated Parmesan cheese evenly over the zucchini.
- Return the baking sheet to the oven and bake for an additional 15 minutes, or until both the sweet potatoes are crispy and softened, and the zucchini is golden brown and crispy.
4. Cook the Flank Steak:
- While the vegetables are baking, heat a skillet over medium-high heat with a drizzle of olive oil.
- Season the flank steak with salt, pepper, and any remaining herbs.
- Sear the steak in the hot skillet for about 3-4 minutes on each side for medium-rare, or cook to your desired doneness.
- Once cooked, remove the steak from the skillet and let it rest for about 5 minutes before slicing it thinly against the grain.
5. Serve:
- Once the vegetables are done baking, remove the baking sheet from the oven.
- Plate the crispy zucchini and sweet potato fries alongside the sliced flank steak. You can sprinkle extra Parmesan over the veggies if desired.
